Want to know my favorite thing about the Super Bowl? The food of course. Next favorite? The half time show and entertainment. I don’t pay so much attention to the actual game, but it’s the entire experience, right?
I love the wings, beer, chips, sandwiches, pizza and nachos – can we pack in any more carbs?
Of course, a staple are nachos especially because they are easy to assemble and delicious in many ways. I usually like to rotate 3-4 main ingredients on my nachos because otherwise all the tastes are lost in the mush. For these particular nachos I used refried beans, black corn chips, avocado, salsa and monterrey jack cheese.
Easy (Super Bowl) Nachos
You Will Need:
- Blue Corn Chips (one bag-can choose any variety of chip)
- 1 cup of monterrey jack cheese (shredded)
- 2-3 avocado’s (cut into small cubes)
- 1 can of salsa
- 1 can refried beans
Preheat the oven to 350.
Take out a baking pan or sheet and lay out the entire bag of blue corn chips. Cover the chips with refried beans, then spread the shredded monterrey jack cheese over the beans and chips. Lightly add a little salsa over the top.
Bake for 15 minutes, until cheese has melted and chips are beginning to crisp. Take out and let cool.
Dice the avocado to cover the nachos and add extra salsa (if you desire). Serve warm! These are really good for a snack or like I said, while watching the Super Bowl (or halftime show!)
