For January, I’ve gone gluten-free. It’s something I’ve always wanted to do, but don’t consider myself as someone who “limits” especially when it comes to food. Food is such a big part of my life. Alas, I want to test how my body feels and on day 8 I feel great.

Part of my plight in gluten-free is learning about great brands that support gluten-free. When they’re local, it’s even better.

Outrageous Baking here in Boulder, Colorado is run by Pamela Fletcher who started the company because her daughter, Grace, had eczema as a baby and their mission was to focus on healthy, whole foods in place of medical intervention as a solution. Hence, came the success of Outrageous Baking because of it’s deliciousness.

I recently had a chance to try many of Pamela’s gluten-free sweet breads such as: chocolate zucchini bread, lemon poppy seed bread, pumpkin bread and cinnamon coffee cake. I really liked how they tasted and each flavor was so strong and enticing. My favorite was the cinnamon coffee cake with the crumble on top. I even shared with non gluten-free friends and the breads were devoured.

I also tried her gluten-free baking mix to do some baking in my kitchen. She blends: Brown Rice Flour, Tapioca Flour, Potato Starch, Sorghum Flour and Xantham Gum.

I made chocolate chip cookies with her flour, as well. They came out heartier than I expected but yummy. I’m perfecting my recipe, especially at altitude.

We’ll have to chit chat about this if we have time. We are gluten free by necessity and feel fortuante in Boulder that it’s not an issue at stores or restaurants. We love this bread. Always buy a slice at the Farmer’s Market and at Vic’s. No one would know it’s gluten free (which you would know if it’s made with weird tasting GF flours or the consistency wasn’t well managed).

Pamela’s baking flour is excellent! Having recently gone gluten free, I had the pleasure of baking those GF chocolate chip cookies with grace! I’m so excited to find a GF flour that is easy to use, an excellent substitute and clean. This GF flour removes any worry I had in the past about how my baked goods would come out with using a substitute flour. I have entered the giveaway by liking pamela’s on facebook!
