Watermelon is the perfect Summer treat.

It’s refreshing, juicy, sweet and just cold enough to cut through the Summer heat.

I have visions of running through sprinklers in my backyard as a child, giggling, barefoot, with watermelon juice running down my chin and in between my chubby little fingers while we tried to see who could spit the little black seeds the furthest.

How I can not love watermelon?

This recipe is a bit more grown up than my watermelon memories, but can be made without the alcohol and are just as delicious.

Spiked Watermelon Popsciles

{Adapted from Giada At Home’s recipe}

You Will Need:

  • 1/2 a watermelon, diced into small chunks
  • 1/4 cup sugar
  • 1 cup vodka (for a non-alcoholic version, substitute with orange juice)
  • 1/2 cup fresh mint leaves, diced
  • 16 popsicle molds or mini-dixie cups

Take the diced watermelon, sugar and vodka and pulse in the blender until smooth.

Add the mint and blend to combine.

Pour the mixture into the popsicle molds and freeze overnight (preferably 10 hours).

When you want to devour these goodies on a Summer evening with friends, put the molds under hot water and devour immediately.
