You won’t need much for this recipe. Just a mini muffin tin which can fit 12 cupcakes, and mini muffin liners.

Of course, you need your oven too, and your normal baking equipment, but nothing more unusual than the mini muffin tool set.

Ingredients

For this cake, the ingredients come in two categories, the chocolate cup layer and the cherry jam filling.

Chocolate Cup Layer

  • Coconut Oil – 1 tablespoon
  • Dairy Free Chocolate Chips – 1 ½ cups

The dairy-free element to your chocolate chip cookies is important. Picking normal chocolate chips means you won’t be sticking to the paleo diet. If you’re only here for the cake, then carry on as you please, but everyone else should double-check the ingredients list!

As a rule of thumb, the darker the chocolate the more it fits into the paleo diet!

Cherry Jam Filling

  • Chia Seeds – 2 teaspoons and another 1 tablespoon
  • Lemon Juice – 1 tablespoon
  • Maple Syrup – 1 tablespoon
  • Frozen Cherries – 1 cup

Method

Step 1 

First, you should chop the frozen cherries by using a food processor. If your cherries aren’t frozen you can simply use a knife.

Once prepared, pop the cherries, lemon juice, and maple syrup into a saucepan.

Heat the mixture for around 5 minutes, or until the cherries begin to break down. We want their juices.

Step 2

When ready, take the cherry mixture off the heat. Then stir in all of the chia seeds.

Pour the mixture into a new bowl, and place it into the refrigerator for 1 hour, as we wait for it to thicken.

Step 3

Nearing the end of that hour give the saucepan a quick clean, then pour in boiling water. Let the water simmer. As this happens, pop your chocolate chips and coconut oil into the heat-safe bowl, and nestle them on top of the simmering water.

Stir the mixture until it’s melted and smooth.

Step 4 

Prepare your muffin tin by placing the muffin liners. Scoop out the chocolate mixture using a teaspoon and dollop it into a muffin liner. Using the back of the spoon spread the chocolate so it flattens out. Make sure the chocolate goes up the sides.

Step 5

Put the muffin into the refrigerator for around 5 minutes or until it has hardened. Leave the remaining chocolate out of the refrigerator.

Step 6

Remove both the muffin tin chocolate and the cherry mixture from the refrigerator. Place the cherry jam into the hardened chocolate with a teaspoon. You will be left with a good portion of jam – don’t worry.

On top of the jam filling, place another 1 ½ teaspoons of melted chocolate. Using the back of the spoon, flattening out the top.

Reheat the chocolate if it’s too hard to pour. 

Step 7

Put the muffin tin back into the refrigerator for 30 minutes or until the chocolate hardens.

When the 30 minutes are up, the cups will be ready. Enjoy!
