Just because you’re on a diet doesn’t mean you need to restrict your plate. You should enjoy all of the flavors the world has to offer and still get the body you hope for.
Get your mixing bowl ready, and let’s get started!
You won’t need much for this recipe. Just a mini muffin tin which can fit 12 cupcakes, and mini muffin liners.
Of course, you need your oven too, and your normal baking equipment, but nothing more unusual than the mini muffin tool set.
Here is the full list:
- Mini Muffin Tin (fits 12)
- Mini Muffin Liners
- Food Processor
- Heat Safe Bowl
- Extra Bowl
- Wooden Spoon
For this cake, the ingredients come in two categories, the chocolate cup layer and the cherry jam filling.
Chocolate Cup Layer
- Coconut Oil – 1 tablespoon
- Dairy Free Chocolate Chips – 1 ½ cups
The dairy-free element to your chocolate chip cookies is important. Picking normal chocolate chips means you won’t be sticking to the paleo diet. If you’re only here for the cake, then carry on as you please, but everyone else should double-check the ingredients list!
As a rule of thumb, the darker the chocolate the more it fits into the paleo diet!
Cherry Jam Filling
- Chia Seeds – 2 teaspoons and another 1 tablespoon
- Lemon Juice – 1 tablespoon
- Maple Syrup – 1 tablespoon
- Frozen Cherries – 1 cup
First, you should chop the frozen cherries by using a food processor. If your cherries aren’t frozen you can simply use a knife.
Once prepared, pop the cherries, lemon juice, and maple syrup into a saucepan.
Heat the mixture for around 5 minutes, or until the cherries begin to break down. We want their juices.
When ready, take the cherry mixture off the heat. Then stir in all of the chia seeds.
Pour the mixture into a new bowl, and place it into the refrigerator for 1 hour, as we wait for it to thicken.
Nearing the end of that hour give the saucepan a quick clean, then pour in boiling water. Let the water simmer. As this happens, pop your chocolate chips and coconut oil into the heat-safe bowl, and nestle them on top of the simmering water.
Stir the mixture until it’s melted and smooth.
Prepare your muffin tin by placing the muffin liners. Scoop out the chocolate mixture using a teaspoon and dollop it into a muffin liner. Using the back of the spoon spread the chocolate so it flattens out. Make sure the chocolate goes up the sides.
Put the muffin into the refrigerator for around 5 minutes or until it has hardened. Leave the remaining chocolate out of the refrigerator.
Remove both the muffin tin chocolate and the cherry mixture from the refrigerator. Place the cherry jam into the hardened chocolate with a teaspoon. You will be left with a good portion of jam – don’t worry.
On top of the jam filling, place another 1 ½ teaspoons of melted chocolate. Using the back of the spoon, flattening out the top.
Reheat the chocolate if it’s too hard to pour.
Put the muffin tin back into the refrigerator for 30 minutes or until the chocolate hardens.
When the 30 minutes are up, the cups will be ready. Enjoy!
What Is The Paleo Diet?
The paleo diet is the act of eating food from the Paleolithic Era. The idea is to restrict your food intake to only include foods available to humans around that time.
This means eating fruits, vegetables, meat, eggs, nuts, fish, and seeds. This may seem like all the food types available to you, however, it doesn’t include common farming-based foods. For example, it doesn’t include dairy products, grains, added sugars, or legumes.
Pasta-based meals, bread-based means, or almost every fast food meal becomes a prohibited food type.
To make a simple paleo diet, simply pick some meat and two vegetables as your dinner. Your breakfast can consist of cold fish and fruit, while your lunch can be a salad.
Snacks are normally fruits or carrot sticks, but as we’ve just shown you, you can still be experimental and fun with your meals.
Most people convert to the Paleo diet to lose weight, lower their blood pressure, or lower their cholesterol.
Modern-day foods are packed with carbohydrates, added sugars, and fats. Although we need all of these nutrients to live a healthy life, we are eating more than our bodies expect.
The Paleo diet is designed to bring us back to nature and feed us what our bodies are most capable of digesting.
This chocolate drizzle cherry jam cake will make your taste buds sing! It’s very simple to make and doesn’t require any pre-known skills.
In fact, you can bake this cake with your children, as long as you help them with melting the chocolate.
Some people also enjoy adding coarse salt to the top of the cake just as they set the chocolate. It adds an extra layer of flavor, creating a salty and tart delight.
Frequently Asked Questions
What Is Paleo Cake Made Out Of?
Paleo diets cannot include grains, which means the flour is off the table. As flour is the key ingredient in cakes, bakers need to be creative. Paleo-diet eaters can have nuts and seeds, so almond flour is a popular choice. Any nut flour will work.
What Is The Healthiest Cake?
The healthiest cake is the Angel Food Cake. It is made with just egg whites. The baker needs to whip the eggs into a fluffy sponge, but no other ingredients are needed. Some bakers will add fruits to include different flavors and layers.
What Does Paleo Mean In Baking?
There are two key ingredients in almost all baking recipes – flour and milk. However, flour and milk are not allowed in the paleo diet.
This means bakers need to look at alternatives to these ingredients and consider how they will impact the structure of their bakes.
